Practice makes perfect.

Today I had a second attempt at mini lemon meringue cupcakes and this time they were perfect, the problem with my first batch was that the meringue was rubbery rather than crispy, but this time perfection! As you can see no complaints from my work colleagues.

Recipe from Cupcakes by Susannah Blake, a brilliant book with some great other decadent recipes, including banoffee and black forest cupcakes.
